Mango Salsa can be served with a variety of dishes including shrimp, grilled chicken, and (obviously) tortilla chips. My personal favorite is baked salmon.
Ingredients
- Mango (2)
- Red Bell Pepper (1/2)
- Red Onion (1/2 Large)
- Jalapeno (1)
- Limes (2)
- Salt
- Black Pepper
- Cilantro
- Honey (2 tbsp)
- Salmon Fillet (1 Pound)
Directions
Season the Salmon Fillet with Salt and pepper, and spread about 2 tbsp of Jerk seasoning from end to end. Place in a baking tray, heat to 350F, and bake for 45 minutes. While the salmon is baking, start to make the Mango Salsa.
Dice the Jalapeño, half of the red onion, 1/2 of the red bell pepper and the mango. Chop the cilantro roughly. The cilantro does not need to be fine, in fact, you would want to have it a little larger then the other veggies.
Toss all of the diced veggies and cilantro, and combine the juice of 2 limes into the mix. Drizzle 2 tbsp of honey into the salsa, toss one more time then place in fridge.
Once the Salmon is finished baking, place two spoonfuls on top of the Salmon and enjoy!
