Ingredients
- Rotini Pasta (1 cups)
- Pepperoni ( 1 bag) (omit for vegetarian option)
- Red onion (1/2 – diced)
- Black olives (1 12oz can)
- Grape Tomatoes (1 plastic box, halved)
- Cucumber (1 diced)
- Mozzarella (omit for Dairy free option)
- Olive oil (1/3 cup)
- Balsamic Vinegar (1/3 cup)
- Italian seasoning (1 Tbsp)
- Sugar (1 Tbsp)
- Salt (1 tsp)
- Pepper (1 Tsp)
Directions
- Boil 1 cup of salted rotini pasta. Set aside in a large bowl
- Dice the red onions and cucumbers, half the grape tomatoes and the black olives.
- Place the veggies in the large bowl on top of the pasta
- In a separate smaller bowl, combine the extra Virgin olive oil, salt, black pepper, Italian seasoning and balsamic vinegar.
- Throw the balsamic mixture into the large bowl and combine
- Refrigerate for at least half an hour before serving
