Todd’s Homemade Pasta Salad*

Ingredients

  • Rotini Pasta (1 cups)
  • Pepperoni ( 1 bag) (omit for vegetarian option)
  • Red onion (1/2 – diced)
  • Black olives (1 12oz can)
  • Grape Tomatoes (1 plastic box, halved)
  • Cucumber (1 diced)
  • Mozzarella (omit for Dairy free option)
  • Olive oil (1/3 cup)
  • Balsamic Vinegar (1/3 cup)
  • Italian seasoning (1 Tbsp)
  • Sugar (1 Tbsp)
  • Salt (1 tsp)
  • Pepper (1 Tsp)

Directions

  • Boil 1 cup of salted rotini pasta. Set aside in a large bowl
  • Dice the red onions and cucumbers, half the grape tomatoes and the black olives.
  • Place the veggies in the large bowl on top of the pasta
  • In a separate smaller bowl, combine the extra Virgin olive oil, salt, black pepper, Italian seasoning and balsamic vinegar.
  • Throw the balsamic mixture into the large bowl and combine
  • Refrigerate for at least half an hour before serving
