Pork Belly “Carbonara” (DF)*

Ingredients:

Pork Belly (1/2 pound)

Salt ( 1tsp)

Pepper (1 tsp)

Spaghetti Pasta

Egg (1)

Parmesan (1 tbsp)

Nutritional Yeast (1 tbsp)

Directions:

Dice Pork Belly and set aside. Place in a mixing bowl and season with 1 tbsp of olive oil and salt and pepper.

In a frying pan, fry the diced pork belly, remove and set aside

Cook spaghetti pasta and be sure to reserve pasta water.

In a small bowl, take the yolks of two eggs, some Parmesan, and nutritional yeast.

Add Spaghetti to the frying pan and toss with butter for a few minutes.

Remove from heat (!) and add the egg mixture and toss.

Plate, then top with Pork Belly, season with cracked black pepper.
