Chicken Breast (3)
Mixed Color Bell peppers (1 cup diced)
Onion (1 diced)
Chicken Stock (2 cups)
Red Kidney Beans (1 cup – drained)
Chopped Tomatoes (1 cup)
White rice (1 cup)
Dice the onion and mixed bell peppers to make around 1 cup of diced peppers.
Coat Chicken breasts in olive oil then with Cajun Seasoning. Fry the chicken breasts on each side on medium for 2.5 minutes in a large pot then set aside.
add vegetable oil and 1 cup of mixed peppers, 1 cup of drained red kidney beans, and 1 cup of dry white rice.
Bring the cajun coated chicken breasts back to the pot, and add 1 cup of chopped tomatoes.
Mix all the ingredients together and add 2 cups of chicken stock.
Let simmer for 25 minutes.
