Easy to make appetizer that can be made in less then 30 minutes and is sure to be a hit!
Ingredients:
- French Baguette
- Tomatoes (I would recommend plum, I eventually went with Campari)
- White Onions
- Cilantro
- Garlic
- Olive Oil
- Lemon
- Lime
- Salt
- Pepper
Directions:
Cut 3 Tomatoes in half and remove the seeds by scooping them out with a spoon.
Dice the tomatoes along with the white onions. Chop cilantro. Mix together in a bowl and set aside.
Take the olive oil, and pour about 1/2 cup into a small separate bowl. Cut 2 Lemons and 2 Limes in half and squeeze both into the olive oil and stir. Add salt and pepper.
Using a bread knife, slice the baguette diagonally, making slices that are between .50 – 1 inches.
Cut a clove of garlic in half and vigorously rub the garlic half on the edges of the sliced bread.
Brush (or carefully pour) the olive oil mixture onto one side of the baguette slices.
Place the baguette slices with the olive oil mixture onto a baking sheet (spread the slices evenly, make sure they aren’t touching) and put them in the oven for 10 minutes on 350 degrees. (until Golden brown)
Scoop Tomato, Onion and Cilantro on top of sliced baguettes and serve.
