Ingredients:
- Sweet Potatoes (2 Large)
- Sweet onion (1/2 Large)
- Red pepper (1/2)
- Yellow bell pepper (1/2)
- Orange bell pepper (1/2)
- Jalapeño (2)
- Turkey Bacon (3 slices)
- Kosher salt
- Black pepper
- Scallions
- Water
- Butter
- Vegetable oil
Also need:
Slice the yellow onions. Dice the red, yellow, orange peppers and jalapeños and put them in separate containers. Slice the Turkey Bacon into tiny squares.
Chop the Sweet potatoes into cubes, place them in a separate container and season with salt and pepper. Toss in vegetable oil.
Take the iron cast skillet and turn the heat to high. Add 2 slices of butter. Put in vegetable oil and once hot, add the sliced sweet onions. After about a minute or two, add all the peppers.
Stir the peppers and onions around until soft. In another 2 minutes add the sweet potato pieces along with the turkey bacon.
After another 2-3 minutes once the potatoes start to brown add in about 1/4 cup of water.
Put the skillet in the oven for 30 minutes. Once finished, take out the skillet, and make 2 spaces for fried eggs.
Start sunny side up eggs on a separate frying pan and once they take form, move them to the iron cast skillet. Put back in the oven and bake for an additional 15 minutes.
Add scallions once the skillet is out the oven.
