Mango Fried Rice with Bacon*

Ingredients:

  • White Rice (2 cups)
  • Mangoes (2)
  • Bacon (4 slices)
  • Scallions (1 bunch)
  • Vegetable oil
  • Salt
  • Pepper


Directions:

Using a sheer, cut 1 inch strips of bacon and set aside.


Dice the mangoes


Use 2 cups of day old white rice.

Put the bacon strips in a frying pan on high for about 5-6 minutes.


Turn the heat to medium, then add the cubed mangoes. Stir with the bacon for about 3 minutes.


Add the white rice and add 1 tbsp of salt and 1 tbsp of black cracked pepper.  Mix all the ingredients for 5 minutes on high.

Plate the fried rice and top with Scallions.
