Rice Pilaf*

Ingredients:

  • Brown Rice (1 cup)
  • Mushrooms (1 cup – sliced)
  • White onion (1/2)
  • Garlic (3 cloves)
  • Chicken Broth (2 cups)
  • Pepper (1 tbsp)
  • Paprika (1 tbsp)
  • Oregano (1 tbsp)
  • Basil (1 tbsp)
  • Thyme (1/2 tsp)

Directions:

Dice half of a white onion, 1/2 cup of mushrooms, and 3 cloves of garlic.

Fry the 3 ingredients in a medium pot with butter and stir on medium low heat.  After a couple of minutes, pour in 1 cup of brown rice.

Stir together once and add 2 cups of chicken broth.

After the liquid is added, season with 1 tablespoon of oregano, basil, paprika and 1/2 teaspoon of thyme.   Turn the heat to to high and watch until boiling.

Once boiling, turn the heat down to medium low, and stir occasionally, until the liquid is completely absorbed.  should be around 20-25 minutes.

Once the ingredients are almost absorbed, turn the heat off cover and move to a different burner. Stir until ingredients are mixed and serve!

Serves 3-4
