Ingredients:
- Mango (1)
- Avocados (3)
- Salt (1 tbsp)
- Black pepper (1 tbsp)
- Cilantro (about 1/2 cup, de stemmed)
- Lime (1)
- Jalapeño (1)
- Tomato (Roma – 1)
- Cumin (1/2 tsp)
- Red pepper flakes (1 tsp)
- Red onion (1/4 cup – diced)
- Water (1/4 cup)
Directions:
Start by dicing your red onion. Place this in a small bowl filled with warm water. Set aside
Split your avocados and remove the pits. Scoop out the insides with a spoon and place into a medium salad bowl. Mash The avocados with a fork, not too much as you still want a chunky consistency.
Split a Roma tomato in half lengthwise and scoop out the middle with a spoon, chop off the end, then dice.
Proceed to dice the mango, de stem and chop the cilantro, split then dice the jalapeño, and add to the salad bowl.
Using a slotted (read: holes) spoon scoop the diced red onions from the small bowl to the salad bowl.
Season the mixture with cumin, salt, black pepper, and red pepper flakes.
last but not least, squeeze the juice of 1 lime in the bowl.
Mix together and enjoy on tacos, burritos, or with chips!
