Ingredients:
Chicken Thighs (1.5 pounds preferably boneless)
Kosher Salt
Black Pepper
Avocado (2)
Limes (2)
Mango (half)
Cilantro
Directions:
Marinate chicken thighs in jerk Marinade for 2 hours in a sealed bowl in refrigerator. Once the time is up, cook the chicken either on the grill or in the oven for about an hour and a half at about 400 degrees.
Once the chicken is finished pull apart the jerk chicken using two forks and set aside in a bowl.
Make the Avocado Mango spread by making guacamole and mixing in diced mangoes. Cut two avocados into slices, chop one bunch of cilantro, use the juice of two limes, and season with salt and black pepper. Mix together until a spread is made.
Set the pulled jerk chicken on one of the slices of bread and the avocado mango spread on the other slice. Add 2 slices of tomatoes to the avocado mango spread.
Slice with a bread knife diagonally.
